The festive season is around the corner and it is the time to celebrate and prepare some delicious cuisines for friends and family.
One the most famous rice recipe in India is Zafrani Pulao. Some people also call it Sweet Saffron Pulao; it is a delicacy made using rice, saffron, sugar, and dry fruits.
It might seem difficult to make when you hear the name for the first time but don’t worry it’s not as big a task as it seems. Just follow our recipe and enjoy the traditional delicious dish with everyone!
- GRM Basmati rice 2 cups
- Saffron – a pinch
- Cashew nuts 10-12
- Ghee 4 tablespoons
- Almonds 15-20
- Nutmeg powder 1/4 teaspoon
- Green cardamom powder 1/2 teaspoon
- Sugar 1/2 cup
- Milk 1/4 cup
- Raisins 25-30
Wash rice twice and soak in just enough water to cover it for half an hour. Drain after 30 minutes.
Heat ghee in a deep pan and gently fry almonds, cashew nuts, and raisins.
When cool, thin slice the almonds and break each cashew nut into half.
In the same pan add rice and sauté gently for two to three minutes. Add nutmeg powder and green cardamom powder to the rice.
In another pan boil milk and sugar adding saffron to it.
Now, add this milk to the rice along with three and a half cups of hot water.
Add raisins to the rice. Stir once. Cover and cook on low heat till done. Allow standing time of five minutes.
Garnish with almonds and cashew nuts. Serve hot.
